Mackerel patties, unusual but delicious
When I read mackerel patties, I immediately thought about using the mackerel cans I had in the kitchen cabinet. So my first thought was about using what I already had at home. But, fortunately, as it often happens, the result was much better than expected.
I have prepared them for lunch, for me and my son, and we ate them all. So I made them again for dinner, so my husband and my daughter could try them too…and also then, no leftovers.
I admit that eating healthy is a part of my behaviour now. I believe that the healthy factor really influences what we choose to eat nowadays…
I still eat junk food once in a while, but not anything. I simply cannot eat something with an enormous quantity of sugar and/or fat inside.
I am saying this because I was beginning the sentence with “mackerel is a blue fish so a healthy choice…”. But it isn’t the first reason you choose a recipe, even if I admit that if this recipe contained a cup of mayonnaise, I’d never try it.
I saw this recipe on an Italian blog that keeps an eye on health while cooking. The blogger is Michela, from Mangia Positivo, and lives in Sardinia as me, even if we never met.
These patties are very easy to prepare and you can have them ready in little time – another great thing ;-). And they do not contain eggs!
How to prepare mackerel patties:
- 4.2 oz canned mackerel (drained)
- 1 grated zucchini
- 3 Tbsp breadcrumbs (better if from whole wheat bread)
- extra virgin olive oil
- Turn on the oven 350°F.
- Cover a baking sheet with parchment paper.
- Crumble the mackerel the more you can, add zucchini, breadcrumbs, salt and pepper to taste. Mix until well combined.
- Form small balls using your hands and put them on the baking sheet.
- Add a thread of extra virgin olive oil over them all.
- Bake until they become golden.
- Buon appetito!
