I called this recipe Christmas plumcake because as soon as I saw it I thought about Christmas.

The author of this recipe says that we should prepare always 2 plumcakes – one for Christmas and the other one to eat immediately. Now that I have prepared and ate it, I completely agree with this idea.

I found this recipe on Simple Recipes blog and I have changed the fruit used and cut a little butter. Try it! It is delicious other than very easy to prepare.

How to prepare the Christmas plumcake

Ingredients:

  • 1 tsp baking soda
  • 1 cup sour cream
  • 1 cup chopped dates
  • 1 1/2 cup raisins
  • 1 cup dried cranberries
  • 1 cup walnuts chopped
  • 2 cups all-purpose flour 1/4 cup + 1 3/4 cup
  • 1/2 cup butter
  • 1 cup sugar
  • 1 egg room temperature
  • 1 tsp salt
  • juice of 1 tangerine

Instructions:

Line a plumcake mold (9x5in) with parchment paper.

Turn on the oven to 325°F.

Mix sour cream with baking soda and reserve.

Mix fruit with 1/4 cup flour, tossing to coat fruits and nuts – it serves to avoid fruit falling to the bottom of the plumcake when baking.

Beat butter with sugar. Then add egg, tangerine juice, sour cream with baking soda. Add flour and, with a spatula, the dried fruit, mixing to distribute it into the dough.

Pour the mixture into the mold and bake for 1:15/1:30 h. It is done when punching it with a stick it comes out clean.

Let it rest 5 minutes and then transfer it to a cooling rack.

Note:

– don’t worry regarding the exact quantity of dried fruit and nuts. It doesn’t matter ;-).
