I prepared these easy tuna patties just because I had some ricotta in the fridge that needed to be used. My children were home and they love tuna and so I didn’t worry as they would be eaten the same.
What I didn’t imagine was that they would come so good, with a taste that reminds me Brazil (I don’t really recall why) and the sensation that I just had to prepare more of them ;-).
They are very easy to prepare. I chose to cook them in the oven, as I avoid frying when possible. I only added little extra virgin olive oil with an oil sprayer, so that the crust came really good.
Some patties come a little bit dry when cooked in the oven, but these come humid, perfect under my point of view ;-).
My children love tuna. Even if they eat fresh tuna, they love canned tuna. They use to eat it since they were in school (even if I do not buy many canned food). When they began university, studying in other cities, they began to cook by themselves. So the easiness of opening a tuna can and adding a mozzarella for a quick snack have increased their fondness for this canned fish ;-).
I do eat canned tuna, but it is not something I look for or desire. I prefer it in a salad or pasta. But I firmly believe that from now, my favorite recipe will be these easy tuna patties. I have prepared them for lunch with different salads (after the holidays I am looking for fresh and light food ), and we really enjoyed them together.
Ingredients:
- 160gr of canned tuna
- 200gr of ricotta
- 2 Tbsp of grated Parmesan cheese
- 2 Tbsp of bread crumbs
- chives (even dried)
- salt
- bread crumbs
- extra virgin olive oil
Instructions:
- Preheat the oven to 200°C/400°F.
- Eliminate the oil from the tuna.
- Mince it and mix with ricotta, grated Parmesan, bread crumbs, chives, and salt (to taste) until well combined.
- Form tuna balls and pass each one on bread crumbs and place them on an oven tray covered with parchment paper.
- Spray them with extra virgin olive oil and bake until colored.
