A delicious healthy fake pizza
This fake pizza would deserve a real name, term, to define it as it is a real dish, a fantastic idea I am enthusiast about. I have prepared it many times as we like it a lot, and call it a fake pizza seems diminish its value. But I could not find any other name to best define it.
This recipe is a great dish for fitness lovers, because it contains eggwhites, not yolks and have few calories even if it satisfies your hunger. And it’s gluten free.
It is very simple to prepare and you need less than half an hout to have it on the table. I’d say it is a 4 people recipe, even if we eat it in two, most of the times. I never had leftovers.
I have found this fake pizza on the Italian blog di Mysia. I have prepared it during Summertime as it seemed to me a Summer dish, probably because of the cherry tomatoes. But then I prepared it on the 1st day of Autumn, a fresh day, and I liked its warmth in a fresh day, when we do not like so much cold dishes. Just to say that it is a recipe for the whole year.
How to prepare the fake pizza:
Ingredients (2/4 people):
6 eggwhites
1 Tbsp grated Parmesan cheese
salt
pepper
300 g/2 to 3 cups cherry tomatoes
3 slices of cheese of your choice (me ementhal)
some fresh basil leaves
oregano
dried garlic
salt
extra virgin olive oil
Instructions:
Turn on the oven 392°F/200°C..
Take a round baking tray of about 9.4in/24cm (better if springform) and cover it with parchment paper you have previously wet and squeezed.
Beat the eggwhites until stiff, add salt, pepper and gently, helping yourself with a spatula, the grated Parmesan cheese.
Pour the mix into the baking tray and level it. Bake for 5 minutes in pre heated oven.
Wash and cut the cherry tomatoes in 4, dress them with olive oil, salt, basil leaves, origano and dried garlic.
Put the cherry tomatoes on top of the eggwhites and distrubute the cheese slices over it.
Bake some more minutes until the cheese melts.
