Palmiers reminds me my grandmother. She had fixed things she liked and each time she went out with my father (they usually go out for shopping on Saturday afternoons), she bought these same things.
Once she noticed I liked canned peaches…so there was always a can of peaches for me. But palmiers were for her. They were wrapped in a pink paper and (till) tied with a twine.
Last year, while we were on the queue in Paul shop in Lincoln road, what was my surprise when Gabriella told me she likes palmiers. Now I feel like my grandmother – each time I see a palmier I feel like buying it for her ;-).
Having this kind of family engagement with palmiers, I was really surprised when I found this super simple recipe on Leite’s great site. You HAVE to prepare it! It is ridiculously simple and easy and the result is…just fantastic!
These are small palmiers (so you just don’t feel guilty as it is easy to forget how many you have already eaten ) and I assure you your family, friends or guests will love this delicacy. I have also prepared them a couple of times and gave them as a small gift. It could be an idea for a food gift for Christmas too.
- 1 cup / 100 g sugar
- a pinch of salt
- 1 package rectangular puff pastry 8 ounces / 225 g
- In a small bowl, mix together sugar and salt.
- On a working place, spread half of the sugar and salt mixture and open the puff pastry over it.
- Roll it up enlarging the pastry but also allowing sugar to adhere.
- Sprinkle the remaining sugar on top and, again, roll it up so the sugar adhere to the pastry.
- Use a pizza cutter to adjust borders.
- Begin making small folds from long one sides towards the middle, so both wrapped pastry will meet at the center.
- Put it on a baking sheet covered with parchment paper and put into the freezer for 15 minutes.
- Turn on the oven to 200°C/400°F.
- Using a sharp knife cut the dough in about ¼ inch (6mm) slices and place them on thebaking sheet keeping them about 2 inches (5cm) one from another.
- Bake them for 12 to 15 minutes, until golden brown.
- Take them out of the oven and carefully flip them. Bake for 8 minutes more or until the second side is caramelized.
- Pay attention to oven time as they can burn very quickly.
- Carefully transfer them to a rack ( taking care of letting them separated) to cool down.
